Chicken Souvlaki is the perfect dish for the summer, and it doesn’t matter if you have a grill or a cast iron skillet. Either way, you can follow one of the two steps listed below.


This recipe is extremely easy to make, and only requires five main ingredients - chicken, oregano, garlic, lemon, and Extra Virgin Olive Oil! But if you want to get a little fancy, serve this dish up with my homemade Tzatziki! ( Recipe Here)


NOTE: If you’re using wooden skewers, make sure you soak them for at least 30 minutes prior to using them. This will prevent them from splintering when cooking!

Soak the skewers for at least 20 minutes so the wood doesn't split. Then evenly skewer the marinated chicken.

Cook the chicken on a grill, or ripping hot cast iron skillet until internal temperature reaches at least 165º.

Serve the chicken with homemade tzatziki ( recipe here), a squeeze of lemon, and parsley for garnish!

Ingredients

  • 1 pound chicken thighs
  • 4 garlic cloves, grated
  • 2 tbsp dried oregano
  • 1 large lemon, juiced
  • 2 tbsp Extra Virgin Olive Oil, plus more as needed
  • Salt & Pepper
  • Tzatziki for serving (link to recipe is above)
Instructions

Cut the chicken into cubes and transfer to a medium bowl. Add the garlic, oregano, lemon, EVOO, salt & pepper. Mix until fully combined. Transfer the chicken to the fridge and marinate for 30 minutes.
Once marinated, skewer the cubed chicken evenly across the skewers.
Heat your grill to medium-high heat. Once hot, spray with non-stick spray and add the chicken skewers. Cook, turning occasionally so the chicken doesn't burn, until the chicken is fully cooked and the internal temperature reaches at least 165º (see notes).
If you don't have access to a grill, heat a skillet (preferably cast iron or carbon steel) over medium-high heat. Once hot, drizzle with high heat oil and add the chicken skewers. Cook, flipping occasionally so the chicken doesn't burn, until internal temperature reaches at least 165º.
Transfer the cooked chicken to a plate and serve with Tzatziki
Tips
  • If you're using wooden skewers, soak them in water for at least 30 minutes prior to use. This will prevent them from splintering.
  • Chicken Thighs can handle being cooked at temperatures above 165º. Even if the chicken hits 200º, the chicken will still be juicy, tender and delicious.
