Sheet Pan Chicken Fajitas

These sheet pan baked chicken fajitas are so simple to throw together for a quick weeknight meal. Made with Bell peppers, onion, chicken, and some spices, they are so flavorful, and don't have the sodium and preservatives that are normally found in the prepacked spice sachets.

We love fajitas, it is one of the first meals I learned how to make on my own, and its a great classic that I always fall back to. Imagine my delight when I realized that you can make them so, so easily at home!

I usually serve my chicken fajitas in a wrap with some cheese and salsa, but I have also served this over rice and it is also very good! These can be on your table in less than 30 minutes and make a super healthy and filling choice.

Ingredients

  • 3 bell peppers, sliced
  • 1 small onion, sliced
  • 1 lb chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • salt and pepper to taste
  • wraps, shredded cheese, salsa for serving
Instructions

Preheat oven to 400 F, line a baking sheet with tin foil
Spread chicken, pepper and onion onto baking sheet, drizzle oil then sprinkle cumin, oregano, garlic powder, chili powder, paprika, salt and pepper on top and mix around
Cook in preheated oven 15-20 minutes, or until chicken is cooked through and veggies are softened
Serve in wraps or over rice with some cheese and salsa
