Recently I went to Nashville for my friend Sharon’s Bachelorette party. The town was amazing, but let’s be serious, I was really there for the food. Sorry, Sharon! Nashville is famous for their Hot Chicken sandwiches. So, naturally I had to get a few dishes and taste test them all. You can’t have one and say it’s good without a comparison sandwich. So after eating about a half dozen, I was inspired to make it for myself at home. Try it out and let us know how you liked it!


We tried to keep this on the lighter side by baking this hot chicken instead of frying. It was well worth it. Less clean up and better for you! This crisped us so nicely as well. Sometimes I have cooking remorse when I bake something instead of frying it because we all know how much better fried food tastes. But my waistline appreciates it in the end.


They had it all in Nashville. This hot chicken was a sandwich, over biscuits in the morning, as sliders for an appetizer, I was not upset at all. We made this in the classic sandwich style over white bread with pickles. We did add some slaw to it which is not traditional, but HIGHLY recommended. It helps take the edge off a bit too.


The spice on this sandwich is just absolutely perfect. I have to admit, there were some restaurants in Nashville that the fried chicken was just plain hot and not spicy or flavorful at all. This is not so spicy that you need a sip of a drink every other bite but just enough to keep you wanting another bite. I think our  Cilantro Lime Sauce would also go good as a topping on this Nashville classic.

Ingredients
Brine
  • 3 cups buttermilk
  • 2 whole chicken breasts
Hot Chicken
  • 1 cup corn flakes crushed up
  • 1 cup flour
  • 2 cups buttermilk
  • 1 tbsp hot sauce
  • 1 tbsp cayenne pepper
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1 tbsp pepper
Hot Chicken Sauce
  • 1 tbsp brown sugar
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 6 tbsp butter
  • 2 tbsp honey
Instructions

Preheat oven to 425°
Buttermilk Brine
Put chicken breasts in a large ziplock bag and add buttermilk
Put in refrigerator and let sit for at least 30 minutes
Hot Chicken Sauce
In a small skillet add butter from Hot chicken sauce ingredients
Heat and melt butter over medium heat
add other ingredients and continue to stir until you have a hot buttery sauce
Set aside for later use
Nashville Hot Chicken
In 2 separate bowl add 2 cups Buttermilk and hot sauce to one and then Flour/Corn Flakes with all other spices in the other
Remove chicken breasts from buttermilk bath and get ready to dip
Dip chicken in dry bowl (flour/corn flakes), wet bowl (buttermilk/hot sauce) and back into dry bowl coating the chicken each time.
Coat the chicken with half of the hot chicken sauce and save the other half for midway through baking
Put chicken on baking rack and put in oven for 20 minutes
Remove chicken (checking temp) coating again with remaining hot chicken sauce and put back in oven for another 15 minutes or until internal temp is at 160°
