One of the foods I missed the most since going gluten free were chicken fingers and fried chicken. They were my guilty pleasure and the gluten free precooked options at the store were super pricey. These oven baked chicken strips are much healthier than the greasy ones I was used to and are so crispy! They're coated in cornflakes then tossed in a low calorie honey hot sauce. Seriously, these might just be the best chicken fingers ever.
You can also use this same method for chicken thighs, drum sticks, wings, etc. if you're looking for a crispy gluten free chicken.

Gluten Free Chicken Fingers
Recipe details
Ingredients
- 2 chicken breasts
- 3-4 cups corn flakes, crushed
- 2 eggs
- 1 cup gluten free flour
- 1/2 tbsp paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- sauce of choice for tossing or dipping
Instructions
- Preheat oven to 425F
- Butterfly the chicken breast then slice into strips
- Season with salt, pepper, garlic powder, paprika, and onion powder
- Set up 3 plates for the dipping station, one with flour, one with 2 whisked eggs, and one with the crushed cornflakes
- Coat each chicken strip with flour, shaking off the access, then dredge them in egg, finishing them in the cornflakes
- Place them on a parchment lined baking sheet then bake for 10 minutes
- Flip the chicken strips and cook for another 5-8 minutes
- Toss or serve with sauce of choice
Tips
- I mixed buffalo sauce & honey for these ones and also made a quick garlic parmesan sauce using mayo, garlic, and parmesan

What kind of corn flakes? Most have barley which has gluten and are made in factories which have glutinous products.
