There is nothing better than a hot, cozy meal in the middle of fall. This creamy chicken bake is the ultimate comfort food, especially when paired with mashed potatoes and veggies. You can even use the extra sauce as a gravy for the potatoes. I find that it can be difficult to make comfort food healthy. Comfort food to me is hearty, like pasta. But the creaminess and cheesiness of this chicken bake makes it feel comforting and it is fairly healthy for you so that’s a bonus! It is such an easy weeknight supper idea that also reheats super well for some delicious leftovers the next day.

Ingredients

  • 2 chicken breasts or 4 chicken tenderloins
  • 1 Tbsp olive oil
  • 2 cloves minced garlic
  • 1 Tbsp lemon juice
  • 1 Tbsp parsley
  • 1 can cream of chicken soup
  • 1 cup heavy cream
  • 1/4 cup parmesan
  • 1/4 cup mozzarella
Instructions

Preheat oven to 350°.
Season chicken with seasonings of your choice. I used garlic powder, paprika, parsley, and salt & pepper.
Place in a greased baking dish and set aside.
In a saucepan over medium heat, sauté the garlic in olive oil until fragrant.
Then add the lemon juice, parsley, cream of chicken, and heavy cream.
Stir and let simmer for a few minutes.
Add the cheese.
Once the cheese is melted, remove from heat and pour over chicken.
Bake for 35-40 minutes or until chicken reaches 165° internally.
