Do you love spinach and artichoke dip?! If so, you will LOVE this casserole dish!


I turned ordinary store bought spinach and artichoke dip into an easy and delicious meal by adding sautéed chicken, onion, baby spinach, mushrooms, and sundried tomatoes to it. Then I simply poured it into a casserole dish, topped it with cheese and baked it until it was golden brown.


My whole family loved this dish, even my dad who was not too excited about it before he tried it. So if you are looking for a new casserole or pasta dish, this is it!


Chicken, spinach, and artichoke casserole can be served by itself or over pasta as a meal or it can be served with slices of good quality bread as an appetizer. It is delicious any way you decide to serve it.




Start by sautéing chicken, onion, mushrooms, and spinach until all cooked through.

Mix the cooked chicken, mushrooms, onion, and spinach together with the spinach and artichoke dip and sundried tomatoes.

Pour into a casserole dish and sprinkle with cheese.

Chicken, spinach and artichoke casserole is delicious by itself if you are following a low carb lifestyle, but can also be served over pasta for a healthy meal your whole family will love!

Ingredients

  • 1 tbsp. Olive oil
  • 2lbs boneless skinless chicken breast, cut into small chunks
  • 1 yellow onion, diced
  • 9oz raw baby spinach
  • 8oz sliced white mushrooms
  • 1 cup sundried tomatoes
  • 16oz spinach artichoke dip (ex. Publix deli brand)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
Instructions

Preheat oven to 350 degrees
Heat olive oil in a large skillet over medium heat
Add chicken and sauté until browned and cooked through.
Add onion and mushrooms and sauté until softened and slightly browned.
Add spinach in batches and sauté until cooked down and wilted.
Transfer to a large bowl and mix together with sundried tomatoes and spinach and artichoke dip.
Pour into a large casserole dish and sprinkle with mozzarella and Parmesan cheese.
Bake for 30min and serve!
