In fact, this past Mother's day, my 5yo daughter wrote on her "all about mom worksheet" that this chicken casserole recipe is her favorite thing I cook! Need I say more?!

Looking for a way to get your family to eat more vegetables? Sneak them into a casserole! Adding broccoli to this chicken casserole is a great way to get more vegetables into your families diet.

I decided to use Greek yogurt in place of sour cream or mayonnaise to lighten up and add more protein to the dish; and guess what, nobody in my family has ever known the difference!

Ritz crackers mixed with melted butter creates the perfect crunchy, and savory topping!

Just look how creamy and delicious this casserole looks. Pair it with a salad, brown rice or mashed potatoes for a well rounded meal. I hope you and your whole family love this dish as much as mine does.

Ingredients

  • 2 lbs boneless, skinless chicken breast, cooked and shredded
  • 1, 12oz bag frozen, Steamable broccoli (cooked according to directions)
  • 1/2 cup non-fat, plain Greek Yogurt
  • 10.5oz, low sodium cream of chicken soup
  • 1/2 cup shredded, cheddar cheese
  • 1 sleeve of ritz crackers, crushed
  • 1/2 cup butter
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper
Instructions

Preheat oven to 350 degrees
In a large bowl, mix together shredded chicken, broccoli, Greek yogurt, cream of chicken soup, garlic salt, and pepper
Fold in shredded cheddar cheese
Spread chicken mixture into a 9x13 baking dish
Melt butter in a medium bowl, stir in crushed ritz crackers and sprinkle over the chicken mixture
Bake for 20-25 minutes
