Using healthier ingredients, no cream involved here, the sauce is the dreamiest and most delicious one you will ever taste.

You will need any pasta of your choice for this recipe.

You will also need frozen or fresh cauliflower, just make sure to boil it first, if fresh.

Ricotta is to be used in this recipe, if you prefer, you may also use tofu if making vegan.

You will also need mushrooms, garlic, lemon juice, water and milk.

Ingredients

  • 8oz (230g) tagliatelle or any pasta of your choice
  • 5 medium/big-sized mushrooms
  • 1 garlic clove
  • 1/2 cup ricotta
  • 2 - 1/2 cups cauliflower
  • 2 tablespoons lemon juice
  • 1/4 cup water
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Parsley to top (optional)
  • Parmesan to top (optional)
  • 2-3 tablespoons olive oil
Instructions

Start by cooking the pasta according to package instructions.
Make sure the cauliflower is cooked and soft to start the sauce.
In a food processor, add the garlic, ricotta, cauliflower, lemon juice, salt and pepper and blend together.
Add in the water and milk and continue to blend until smooth. Set aside.
In a frying pan, add about 1 tablespoon of olive oil and the mushrooms. Add some salt, pepper and let cook until softened.
Once the pasta is ready, add it to the pan, and add the sauce to it. Combine together then serve!
You can top with more olive oil, parsley and parmesan.
