Looking for an easy meal that is so delicious and feeds a hungry family. Well, look no further. I have the best recipe that takes no time to prepare and was a hearty dish and my family enjoyed it very much. I am a fan of cajun seasoning. I also love grill cooking year-round, but in the summer, when corn is in season, this dish is the best. I recommend getting peaches and cream corn if you can buy it where you live. It is the sweetest summer corn. I made this dish with turkey sausage, because my family doesn't like pork, but you can certainly use any type of sausage that you prefer.

Ingredients

  • 4 pieces of corn (cut into 1/3)
  • 2 green zucchinis (cut into large chunks)
  • 1 bag of peeled raw shrimp (deveined)
  • 1 Tbsp olive oil
  • 1 package of turkey sausage
Sauce
  • 2 Tbsp Cajun seasoning 
  • 1 Tbsp Garlic Powder
  • 1 tsp Onion powder 
  • 2 tsp smoked paprika 
  • 1 tsp honey 
  • Pinch red pepper flakes 
  • 1/2 tsp salt 
  • 3 Tbsp olive oil 
  • 2 Tbsp cilantro
Instructions

Prepare vegetables as noted above
Bring pot of water to boil, add 2 TBSP sugar and boil corn pieces of 10 minutes, drain and set aside to dry
Defrost shrimp in a colander with cold running water and dry once defrosted
Toss shrimp, zucchini, corn into a bowl and add olive oil, mix and put into a bbq wok
Put onto the grill
Add the turkey sausages to the grill and cook 10-12 minutes or until no longer pink
Grill until shrimp cooked and zucchini is softened, about the same time
Remove from grill. Toss the zucchini, corn and shrimp into a big bowl. Slice the turkey sausage into large chunks and add to the bowl. Pour over the sauce, mix thoroughly and top with cilantro. Serve immediately.
