Quick and Easy Vegetable Egg Scramble

Two things I am always looking to do is add in more vegetables and protein to my diet, especially at breakfast time! Enter in this super quick vegetable egg scramble recipe. It is my take on an omlette that is packed full of tender vegetables and tasty cheese.


One of my favourite things about this recipe is that it is super versatile. I like using broccoli, mushrooms and peppers however other vegetables like spinach, zucchini, carrots and cauliflower are also delicious to add in too!


I like to serve this with a slice of whole grain toast, sliced tomatoes and fresh fruit to make this a hearty and delicious meal!

Ingredients

  • 2 large eggs
  • 1 Tbsp milk of your choice
  • 2 Tbsp butter
  • 1 1/2 cup chopped vegetables (I like broccoli, mushrooms and peppers)
  • 1 Tbsp feta cheese
  • 1 Tbsp sliced green onion
  • Salt, pepper and Italian seasoning to taste
Instructions

In a small mixing bowl, whisk together eggs and milk until fully combined. Set aside.
In a medium sauce pan, melt 1 tablespoon of butter over medium heat. Once melted, add in chopped vegetables and sauté until tender, about 7-8 minutes.
To the cooked vegetables, add in the remaining butter and allow to melt. Give the pan a swirl so the melted butter is evenly distributed.
Add in whisked eggs over the vegetables and use a wooden spoon or flipper to stir the eggs until cooked to your liking, about 2 minutes. Season with salt, pepper and Italian seasoning.
Sprinkle over feta cheese and green onion and serve hot.
Enjoy!
Tips
  • Top with hot sauce for some added flavour!
