Sourdough Discard Pancakes

I have been making the sourdough starter and I have been discarding some each time and knew I could use it to make something, I decided to make some pancakes like I would if I made it with the sourdough starter. They turned out so good, everyone loved them and they are so easy to make, I use vanilla and cinnamon in the recipe and it gives that something extra. These pancakes are very light they don't feel heavy after eating them. They are a definite favorite at our house. I get my liquid ingredients mixed together and then I sift my dry ingredients together and add to the wet ingredients. Whisk together until lump free. Pour about a 1/2 cup onto your hot skillet and turn when it browns on one side. Cook until the other side is browned.

Ingredients
Pancakes
  • 2 C all purpose3 flour
  • 1 C sourdough discard
  • 1 t baking soda
  • 2 t baking powder
  • 1 t cinnamon
  • 1 t vanilla extract
  • 2 Large eggs
  • 1/2 t salt
  • 2 T olive oil oil
Instructions
Pancakes
Preheat a skillet with butter.
Sift all of the dry ingredients together.
Mix all of the wet ingredients except the sourdough discard.
Mix the two together and then add in the sourdough discard..
Mix completely until smooth.
Pour about a 1/2 C mix into the pan to brown on both sides.
Serve with butter and syrup.
