Not only that but this recipe can be easily modified to your liking, whether it's by adding chocolate chips or switching over to raisins, or walnuts - the world is your oyster! A special shoutout to Chef Bae who inspired the adaptation of this recipe. Note that this recipe is not like your typical cookie which gets crisp - this will remain nice and soft because of the high-fat content coming from the almond flour. Enjoy!

Ingredients

  • 1/3 cup coconut oil
  • 1/4 cup coconut sugar
  • 1 egg or flax egg
  • 1 two vanilla extract
  • Pinch of salt
  • 1/2 tsp baking soda
  • 2 cups almond flour
  • 1/2 cup dark chocolate chips
  • 1/4 cup salted caramel chocolate chips
Instructions

Preheat the oven to 350F and line a baking sheet with parchment paper.
In a large bowl, mix the coconut oil and coconut sugar together. Add and mix in the egg + vanilla extract.
Add all remaining ingredients except for the chocolate chips and mix well.
Fold in chocolate ships.
Roll the cookies into balls and flatten them to the desired shape.
Bake for 9-10 minutes.
Tips
  • The cookies will remain soft as the base is almond flour which is higher in fat.
  • Feel free to add in other toppings such as chopped walnuts, raisins, etc!
