The only thing better than brownies is decadent gluten free brownies. This recipe really is a winner, catering to both the sweet tooth and the gluten intolerant. It always gets eaten up within a few hours out the oven and also leaves the house smelling amazing, with scents of chocolate wafting through the rooms. I love making this recipe when I have gluten intolerant guests because it tastes delicious and everyone enjoys it, without them feeling like they are eating anything worse off than the other guests. In fact, I often get asked a few times if I'm sure it has no gluten in it!

Ingredients

  • 200 grams semisweet chocolate
  • 6 tablespoons canola oil
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 1/4 cup cocoa powder
  • 2/3 cup white sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
Instructions

Preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit) and line a small square baking tin with parchment paper, leaving extra to on the sides for easy removal.
In a large heatproof bowl melt the chocolate at 20 second intervals in the microwave, stirring in between.
Add in the oil and stir until fully combined. Repeat with the eggs and vanilla.
Add in the cocoa, sugar, cornstarch and salt.
Pour the batter into the prepared tin. Place the batter in the oven for 25-30 minutes until the middle hardens and the top begins to 'crackle'.
Let cool completely before taking out of tin and cutting into squares.
