The only thing better than brownies is decadent gluten free brownies. This recipe really is a winner, catering to both the sweet tooth and the gluten intolerant. It always gets eaten up within a few hours out the oven and also leaves the house smelling amazing, with scents of chocolate wafting through the rooms. I love making this recipe when I have gluten intolerant guests because it tastes delicious and everyone enjoys it, without them feeling like they are eating anything worse off than the other guests. In fact, I often get asked a few times if I'm sure it has no gluten in it!

Ingredients
- 200 grams semisweet chocolate
- 6 tablespoons canola oil
- 2 eggs
- 2 teaspoons vanilla essence
- 1/4 cup cocoa powder
- 2/3 cup white sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit) and line a small square baking tin with parchment paper, leaving extra to on the sides for easy removal.
- In a large heatproof bowl melt the chocolate at 20 second intervals in the microwave, stirring in between.
- Add in the oil and stir until fully combined. Repeat with the eggs and vanilla.
- Add in the cocoa, sugar, cornstarch and salt.
- Pour the batter into the prepared tin. Place the batter in the oven for 25-30 minutes until the middle hardens and the top begins to 'crackle'.
- Let cool completely before taking out of tin and cutting into squares.
