Okay okay, I knoooowww pumpkin spice is such a basic trend in the fall. Honestly, I’m not that into the pumpkin spice coffee and pumpkin spice flavored everything. But when it’s a pumpkin dessert with cream cheese frosting, count me in.🤤 Cream cheese is the most perfect complimentary pairing with anything pumpkin!! I would die for pumpkin bars. I was craving those, but for this recipe I decided to “spice” things up a little bit. (See what I did there?😉) Not that you can really improve pumpkin bars. They are literally perfect in every way. This is just a little different spin on it! It would be the perfect Thanksgiving dessert if you’re not a pie person like me!

Ingredients
For the cake:
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 1 cup olive oil
  • 1 can pumpkin puree
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
For the cream cheese frosting:
  • 8 oz softened cream cheese
  • 1/4 cup melted butter
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla
Instructions
For the cake:
Heat oven to 350° and grease a 9x13 pan.
In a large bowl, mix together eggs, sugars, oil, pumpkin, and vanilla.
Add in flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and ginger until just mixed.
Pour into greased cake pan and bake for 30-35 min or until toothpick comes out clean. Let cool completely.
For the cream cheese frosting:
In a small bowl, combine cream cheese, butter, powdered sugar, and vanilla.
Beat until there are no clumps left.
Spread over completely cooled cake and sprinkle with cinnamon!
